"Bi" means "two". You may want to come up with a different term for someone attracted to more than two genders who is still not pansexual, because I can see that getting very confusing.

Actually Bisexual is the Community Identity Label for people who can ♥ people of SAME/SIMILAR Gender as them + can ♥ people of DIFFERENT Sex + Genders/Gender Presentations from themselves.
Community Identity Labels describe our Commonalities and give us a Space to be Together.
Personal Identity Labels including but not limited to pansexual as well as a Huge Number of other words vary by region + other demographic data such as ethnicity/religion, age, educational attainment, gender, socioeconomic background, et. al. serve a vital function for individuals: they describe my Individual Differences and give me a Space in which to be Unique.
Why might some people use words other than bisexual? Sometimes it’s because people who are heavily into Queer Theory wish to reflect their particular ideas about things such as gender theory.
Sadly, sometimes it’s because people are so overwhelmed by all the bullying, badgering and mean jokes that happen when they tell people they are bisexual, that they just pick some synonym for bisexual that few people have ever heard of. Unfortunately this does not work very well because as soon as the bigots and the bullies realize it’s just another way to say bisexual all the taunting and teasing start right up again. Except now people add the phrase "special-snowflake" to the list of invectives.
But mostly people add or use a variety synonyms for bisexual, because that is the slang usage in their particular area. Just the same way in some places people might call a sweet-fizzy drink a Pop, or a Cola, or a Soft-Drink or a Soda or whatever - depending on where they live.
While the overwhelming preponderance of people (between 93% to 97%) do just use bisexual, some people also like to use compound identifiers such as Bi Radicals + BiDykes, Bisexual-Queer (lots of those) or even Transgender Bisexual Political Nerd to more fully describe themselves.For even more information you might want to read the excellent article entitled “Way Beyond the Binary” from Boston’s highly respected Bisexual Resource Center (BRC).
