I cut a carrot into small pieces, minced a clove of garlic, and threw it into a pan along with a can of corn and some olive oil for sautéeing. While that was cooking, I greased a pan and then beat together 3 eggs with a cup of milk and some seasonings. Then I mashed up some cubes of feta. When the veggies were cooked, I poured them all over the bottom of the pan, sprinkled the cheese over them, and then poured the eggs/milk mixture on top. Then I baked it at 375 degrees for half an hour (or possibly more, we shall see).
Haven’t actually seen if it turned out well yet (still baking), but I just wanted to remember how I did it incase I want to do it again sometime! I used this article for guidance.
